Ingredients

  • For the meat layer:

    • minced lamb (or beef)
    • 1 large onion, finely chopped
    • 2 carrots, finely chopped
    • 2 cloves garlic, minced
    • beef or lamb stock
    • tomato purée
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • Salt and pepper to taste

  • For the potato topping:

    • potatoes, peeled and quartered
    • butter
    • milk
    • Salt and pepper to taste
    • grated cheddar cheese (optional)

Method

  1. Prepare the potatoes: Boil the potatoes in salted water for 15-20 minutes, or until tender. Drain well and mash with butter and milk. Season with salt and pepper to taste. Set aside.
  2. Cook the meat: Heat the olive oil in a large pan over medium heat. Add the onion and carrots and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Increase the heat to high and add the minced lamb (or beef). Cook, breaking it up with a spoon, until browned.
